1 lb. of Jumbo Lump Crab Meat

1 egg

2 tablespoons of mayonnaise

2 tablespoons of finely minced Italian Parsley

2 teaspoons of Old Bay Seasoning

¾ cup of panko bread crumbs

½ teaspoon of mustard or juice of half a lemon

Canola oil


Beat the egg, and combine all the ingredients, gently folding in the crabmeat (so as not to break it up too much). Shape into patties in whatever size you choose.  Fry over medium high heat until golden. Serve and enjoy with a squeeze of lemon and some tartar or cocktail sauce.
