Ingredients

2 Fresh Salmon Fillets (4-6oz.)

2 teaspoons of mayonnaise

Juice of ½ lemon

¼ teaspoon of coarse salt

¼ teaspoon of freshly ground pepper

1 sprig of dill chopped finely

1 tablespoon of Olive Oil

Directions

Preheat oven to 350°F.  Take two pieces of foil and brush each with ½ tablespoon of olive oil.  Place one filet of salmon on each piece of foil (skin-side down). In a bowl combine mayonnaise, lemon juice, salt, pepper, and dill.  Spread this mixture evenly on top of each salmon fillet. Tent the foil, leaving an opening for venting, and place in the oven in a Pyrex dish or on a baking sheet for approximately 30 minutes.  Great if served with red potatoes or asparagus. ENJOY!
