This is a quick and easy recipe, and perfect for date night, for those who love seafood.
Ingredients:
2lbs. of mussels
½ cup of heavy cream
½ stick of salted butter
5 cloves of garlic minced
½ bunch of freshly chopped Italian Parsley
Pinch of salt
Pinch of pepper
½ cup of Riesling or dry white wine of your choice
Directions:
Thoroughly clean your mussels, and make sure they are alive. If they are open, they will close when you tap or touch them. Discard any dead ones.
In a medium saucepan, over medium high heat, add butter and olive oil. Add the garlic, until it becomes fragrant. Add the wine and the mussels immediately, allowing to cook for about 5 minutes. Then add the heavy cream and a pinch of salt. Continue to cook for another 6-8 minutes covered. Remove cover and add chipped parsley and allow to cook for another two minutes, making sure to toss the mussels from time to time throughout the process. Serve with a good baguette, so as not to waste the delicious sauce. ENJOY!
